Pasteurized cow’s milk – Denmark

A white to yellowish cheese with nice blue veins and an open structure that crumbles a bit when you cut it. The taste is sharp and salty with good balance between mould, salt and the sweet taste of the cow’s milk.

Produced from the dairy cooperative of Bornholm Island in Denmark, Danish Blue is a modern 20th century take on the more classic Roquefort style cheeses.
