Raw cow’s milk – Italy

A hard cheese named after the provinces of Parma and Reggio Emilia where it is produced. After the cheese is shaped in a stainless compression mould, it is then aged and turned for 24 months on wooden shelves.

True Parmigiano Reggiano cheese has a sharp, complex fruity/nutty taste with a strong savoury flavour and a slightly gritty texture.
